Medieval Persian Pomegranate & Walnut Stew (Ancestor of Fesenjan)

The Legend of the Peace Stew An old Persian legend tells of two rival generals who agreed to share one final meal before going to war. A village cook prepared a rich stew of walnuts, pomegranate, and warm spices. One general found it too sweet, the other too sour. The cook smiled and said, "Peace, like this stew, is found when every flavor has its place." By the time the pot was empty, the generals had chosen conversation over conflict. The battle never happened. Since then, Fesenjan has been remembered as a dish that celebrates patience, balance, and the power of sharing a meal.

Ingredients

  • 500 g chicken thighs or duck
  • 2 cups walnuts, finely ground
  • 2 tbsp pomegranate molasses
  • 1 fresh pomegranate (seeds)
  • 1 medium onion, finely chopped
  • 2 tbsp butter or ghee
  • 1 tsp cinnamon
  • ¼ tsp turmeric
  • Pinch of saffron (optional)
  • 2 cups chicken stock
  • Salt and black pepper
  • 1 tbsp honey (optional)

Steps

  1. 1 Ingredients (4 servings)
  2. 2 500 g chicken thighs or duck
  3. 3 2 cups walnuts, finely ground
  4. 4 2 tbsp pomegranate molasses
  5. 5 1 fresh pomegranate (seeds)
  6. 6 1 medium onion, finely chopped
  7. 7 2 tbsp butter or ghee
  8. 8 1 tsp cinnamon
  9. 9 ¼ tsp turmeric
  10. 10 Pinch of saffron (optional)
  11. 11 2 cups chicken stock
  12. 12 Salt and black pepper
  13. 13 1 tbsp honey (optional)
  14. 14 Method
  15. 15 Brown the chicken in butter and set aside.
  16. 16 Cook the onion until golden.
  17. 17 Stir in the cinnamon and turmeric.
  18. 18 Add the ground walnuts and toast gently for 3–4 minutes.
  19. 19 Pour in the stock and simmer for 20 minutes. The walnuts will release their oils and naturally thicken the sauce.
  20. 20 Return the chicken to the pot.
  21. 21 Add pomegranate molasses and saffron.
  22. 22 Simmer gently for another 40–60 minutes.

  24. 24 More molasses for tartness.
