A tangy lentil stew with vegetables, tamarind, and roasted spice blend. The soul of every South Indian thali — served with rice, dosa, idli, and vada.
Ingredients
- 1/2 cup toor dal (split pigeon peas)
- 1 small onion, chopped
- 1 tomato, chopped
- 1 cup mixed vegetables (carrot, beans, drumstick, eggplant)
- 2 tbsp tamarind pulp
- 2 tbsp sambar powder
- 1 tsp turmeric powder
- 1 tsp mustard seeds
- 2 dried red chilies
- 10 curry leaves
- 2 tbsp oil
- Salt to taste
Steps
- 1 Pressure-cook toor dal with a pinch of turmeric until soft. Mash and set aside.
- 2 Soak tamarind in 1 cup warm water for 10 minutes; extract the pulp.
- 3 Heat oil in a pot. Add mustard seeds; once they pop, add dried red chilies and curry leaves.
- 4 Add onion, tomato, and mixed vegetables. Sauté 3 minutes.
- 5 Add sambar powder, turmeric, and salt. Stir for 30 seconds.
- 6 Pour in tamarind water and 2 cups of water. Simmer 10 minutes until vegetables are tender.
- 7 Add the mashed dal, adjust water for desired consistency, and simmer 5 more minutes.
- 8 Garnish with a few fresh curry leaves and serve with rice or idli.
