A hearty one-pot rice, lentil, and vegetable dish flavored with a special spice blend (bisi bele bath powder) and finished with a ghee tempering. Comfort food from Karnataka, especially in cold weather.

Ingredients

  • 1 cup rice
  • 1/2 cup toor dal
  • 1 cup mixed vegetables (carrots, beans, peas, eggplant)
  • 2 tbsp bisi bele bath powder
  • 1 tbsp tamarind pulp
  • 2 tbsp ghee
  • 10 cashews
  • 1 tsp mustard seeds
  • 10 curry leaves
  • 2 dried red chilies
  • Salt to taste

Steps

  1. 1 Pressure-cook rice and toor dal together with 4 cups water for 4 whistles.
  2. 2 Cook the mixed vegetables separately until tender.
  3. 3 Combine rice, dal, vegetables, tamarind pulp, bisi bele bath powder, and 2 cups warm water in a pot. Simmer 10 minutes.
  4. 4 Heat ghee in a small pan. Fry cashews until golden, then add mustard, dried red chilies, and curry leaves.
  5. 5 Pour the tempering over the bath, mix well, and serve hot with raita or potato chips.
